Lemon Thyme Spatchcock Chicken

total preparation time: 50-60 minutes

(Barbecue Grill)

  1. Pre-heat a barbecue grill until the coals are glowing.
  2. Remove the chicken from the vacuum bag allowing 15 minutes for the chicken to come to room temperature.
  3. Season with sea salt and fresh ground black pepper.
  4. Place on the grill turning every 5-10 minutes.
  5. While the chicken is cooking, grill two half pieces of lemon – cut side down.
  6. After 40 minutes of cook time, remove the chicken from the grill and allow to rest.
  7. Cut the chicken into 10 pieces and squeeze the grilled lemon over.

(Convection Oven)

  1. Pre-heat a convection oven to 385˚F.
  2. Remove the chicken from the vacuum bag allowing 15 minutes for the chicken to come to room temperature.
  3. Season with sea salt and fresh ground black pepper.
  4. While the chicken is cooking, grill two half pieces of lemon – cut side down.
  5. After 35 minutes of cook time, remove the chicken from the grill and allow to rest.
  6. Cut the chicken into 10 pieces and squeeze the grilled lemon over.
