Tagliatelle al Ragu – 6 Hour Bolognese
Veal, pork, pancetta, parmesan
Serves 2
- Bring a pot of boiling salted water to a boil.
- Add the tagliatelle, stir and cook for 4 minutes.
- Meanwhile warm the bolognese sauce in a pot over low heat.
- After 4 minutes strain the tagliatelle from the water – reserve 5oz of the water.
- Add the reserved pasta cooking water to the bolognese sauce.
- Immediately add the tagliatelle and combine thoroughly.
- Over gentle heat cook the sauce and pasta together for 1.5 minutes.
- Add the butter to the pasta and mix together to emulsify.
- Taste the pasta and sauce – a pinch of salt may be needed.
- The pasta is ready to serve. Serve the grana padano on the side
