Casarecce with Spicy Chorizo Sausage

  1. Bring a pot of boiling salted water to a boil.
  2. Add the casarecce and cook for 7 minutes.
  3. Meanwhile warm the chorizo sauce in a pot over low heat – add the cream.
  4. After 7 minutes, strain the casarecce from the water. Dress with olive oil and add to the chorizo sauce. 
  5. Over a gentle heat, cook the sauce and pasta mixture together for 2 minutes. Sprinkle over the parmesan cheese and mix thoroughly.
  6. Add salt as needed.
