Lemon Thyme Spatchcock Chicken
total preparation time: 50-60 minutes
(Barbecue Grill)
- Pre-heat a barbecue grill until the coals are glowing.
- Remove the chicken from the vacuum bag allowing 15 minutes for the chicken to come to room temperature.
- Season with sea salt and fresh ground black pepper.
- Place on the grill turning every 5-10 minutes.
- While the chicken is cooking, grill two half pieces of lemon – cut side down.
- After 40 minutes of cook time, remove the chicken from the grill and allow to rest.
- Cut the chicken into 10 pieces and squeeze the grilled lemon over.
(Convection Oven)
- Pre-heat a convection oven to 385˚F.
- Remove the chicken from the vacuum bag allowing 15 minutes for the chicken to come to room temperature.
- Season with sea salt and fresh ground black pepper.
- While the chicken is cooking, grill two half pieces of lemon – cut side down.
- After 35 minutes of cook time, remove the chicken from the grill and allow to rest.
- Cut the chicken into 10 pieces and squeeze the grilled lemon over.
