Tagliatelle al Ragu – 6 Hour Bolognese

Veal, pork, pancetta, parmesan

Serves 2

  1. Bring a pot of boiling salted water to a boil.
  2. Add the tagliatelle, stir and cook for 4 minutes.
  3. Meanwhile warm the bolognese sauce in a pot over low heat.
  4. After 4 minutes strain the tagliatelle from the water – reserve 5oz of the water.
  5. Add the reserved pasta cooking water to the bolognese sauce.
  6. Immediately add the tagliatelle and combine thoroughly.
  7. Over gentle heat cook the sauce and pasta together for 1.5 minutes.
  8. Add the butter to the pasta and mix together to emulsify.
  9. Taste the pasta and sauce – a pinch of salt may be needed.
  10. The pasta is ready to serve. Serve the grana padano on the side
